Vadouvan Curried Lentils with Potatoes and Broccoli
Heat two tablespoons of ghee and two tablespoons of olive oil in a large pot over medium high heat.
Next add one chopped yellow onion.
Then add 5 chopped cloves of garlic and 2 inch piece of finely chopped ginger.
Add one whole chopped tomato and cook stirring regularly for 5 - 10 minutes.
Add 3 - 4 generous spoonfuls of Vadouvan curry powder blend and cook for another 2 minutes.
Add two cups of red lentils, salt, and 8 cups of water and bring to a boil.
Add some chopped broccoli and 3 - 4 potatoes.
Reduce heat, cook for 20 - 30 minutes stirring regularly.
Serve with salt, pepper, and chopped parsley.
